Savoury Gram Flour Pancakes

Ingredients
100g/4oz Chickpea Flour (Gram)
1/2 tsp Salt
1/2 teasp Cayenne Pepper (check ingredients label)
Black Pepper
330ml/11 fl.oz. Iced water
Oil for frying
Instructions
1. Preheat the oven to very low. In a large mixing bowl, mix together the flour, salt, cayenne and Black pepper.
2. Gradually add the iced water, beating well, until you get a smooth batter. Add a little more water if necessary.
3. Heat a little oil in a frying pan, add a quarter of the batter, swirling it around the base to coat evenly, and cook until the edges are crispy and brown, and the top has dried out. Transfer to a warm plate, cover loosely with foil and keep warm in the oven whilst you cook the remaining pancakes.
4. Serve with the savoury filling of your choice.
