CODEX STANDARD FOR "GLUTEN-FREE FOODS" CODEX STAN 118-1981 (amended 1983)
- this is the official definition of gluten free food. the key paragraph is:
2.2.2 For the purpose of this standard,
gluten-free
means that the total nitrogen content of the
gluten-containing cereal grains used in the product does not exceed 0.05 g per 100 grammes of
these grains on a dry matter basis.
